Ingredients:  
Start with basic mirepoix (onion, celery and carrots) with fresh garlic and oil in kettle.
Cut up 3-4 heads of cauliflower and add to kettle and sauté with oil.
When cauli is cooked down add water or stock just until almost covered. Let boil until the carrots and cauli are easily broken down.
Add salt and pepper (if using veggie base or chicken base account for the salt content)
Blend with large blender until smooth. Taste and check if need more s&p. If soup is too thin then add some instant mashed potatoes to keep the soup gluten free. When consistency is right add ˝ -1 quart of heavy cream and about 1 quart of buffalo sauce.
