2 pounds butternut squash,peeled,seeded.cubed
2 medium cooking apples,peeled and chopped
1 large onion,chopped
1 teaspoon ginger
1/4 to 1 teaspoon curry powder
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/8 teaspoon ground cloves
2 14 oz cans chicken broth
1 cup apple juice or cider
1/2 cup light cream
dairy sour cream (for garnish)

Directions:

In a 4-5 quart crockpot combine squash,apples onion,ginger,curry powder,salt,cinnamon, and cloves.
Pour broth and apple juice over all.
Cover and cook on low for 8-9 hours or on high for 4-5 hours. Cool slightly.
Using immersion blender ,blend until smooth.Stir in light cream. Top with sour cream,apple slices or sunflower seeds.
