2 T. rapid rise yeast
1 c. warm water (NOT HOT)
⅓ c. vegetable oil
¼ c. sugar
1 large egg
1 tsp. salt
3 c. all-purpose flour plus up to ½ c. more if needed to make a soft dough

Directions:
Directions:
Preheat oven to 425º.
In the bowl of a stand mixer fitted with the paddle attachment combine yeast, water, oil, and sugar and let stand for 5 minutes. Add the egg, salt, and flour and mix until dough pulls away from the sides of the bowl. Dough should be soft but not runny; add additional flour, ¼ c. at a time, if necessary to achieve proper consistency.

Switch to dough hook and mix for about 5 minutes until dough is smooth and elastic. Turn dough onto a floured surface. DO NOT LET RISE. Divide into 12 pieces and shape each one into a ball. Place 3 inches apart on greased baking sheet(s). Cover and let rest for 10 minutes.

Bake for 8 to 12 minutes until golden brown. Cool on wire racks.

When you can't go to the store, this is an easy recipe for hamburger buns! You can baste the tops with beaten egg and top with sesame or poppy seeds before baking if you like.
