Put the Pride of the West in a shallow dish. Dredge chicken in flour first, then dip in egg mixture, then dredge in Pride of the West. Fry for 10 minutes on each side, do not crowd in the pan, leave space between pieces. Do not cover. After each batch, remove fried pieces to a oven safe dish lined with paper towels, and keep warm in 200° oven until all pieces are fried. Makes 4 servings.
