2 # fresh raw shrimp (peeled and deveined), or 1 # cooked and peeled
1/4 c butter
1/2 to 3/4 c cold firm butter
1 clove garlic, minced
1 tsp salt
1 c dry sherry or sauterne
1/2 c very finely chopped parsley
1 1/4 c dry bread crumbs
1/4 c grated Italian cheese
1/4 c melted butter

Directions:
Cook raw shrimp gently in salted boiling water 3 - 5 minutes depending on size. Drain. Split length-wise and sauté shrimp in the 1/4 c butter for a few seconds.
Beat 1/2 c or more cold, firm butter until very light, about 3 minutes. Add the garlic, salt, wine (a little at a time), parsley, and the bread crumbs alternately.
Pour sautéed shrimp into a greased shallow round baking dish that measure about 10x1 inches.
Spread crumb preparation over shrimp with a fork as uniformly as possible. Sprinkle with grated Italian cheese and drizzle with milted butter (about 1/4 cup).
Bake at 350º about 30 minutes (longer if casserole is put together in advance and ingredients are cold), then broil until brown and crisp for 2-3 minutes.
