1 Tbsp oil
1 onion chopped
2 cloves garlic chopped
1-2 Tbsp chopped fresh ginger root
1 Tbsp thai red curry
2 lbs peeled, diced sweet potato
4 cup veg stock or water
1/3 c canned coconut milk

Directions:
Directions:
Heat oil, add onions, garlic and ginger. Cook till tender, 5-7 minutes. Add curry paste and cook for 1 minute. Add sweet potatoes and stir to coat. Add stock and bring to boil. Add 1 tsp salt and 1/4 tsp pepper if using water. Cook 20-25 minutes until sweet potatoes very tender. Puree. This is where an immersion blender is great. Add coconut milk and cook 5 minutes longer. Serves 6-8.
