3 eggs, beaten
2 ½ c. sugar
2 c. grated zucchini
1 c. oil
2 tsp vanilla

3 c. flour
1 tsp baking soda
2 tsp cinnamon
¼ tsp baking powder
1 tsp salt

1 c. walnuts or raisins or chocolate chips

Directions:

Mix first 5 ingredients
Combine dry ingredients
Mix together and add nuts, raisins or chocolate chips if desired
Pour into 2 greased and floured loaf pans
Bake at 350º for 1 hour
Let cool completely before slicing
Freezes well

Whenever we visited Grandma Brooks in Ohio, there was a never ending supply of zucchini bread. As soon as we finished one loaf, another appeared.
