2 c. old fashion Oats
2 c. hot water
2 tbspsweetener (stevia/monk fruit/xylitol alternative to cane sugar)
¼ c. almond/coconut or rice milk
½ tsp salt
1 tsp vanilla
½ tsp cinnamon/nuts/fresh fruit (optional)

Directions:
Directions:
Bring 2 c. of water to boil.
Add salt, vanilla, sweetener and milk.
Add oats to liquid and mix.
Place in 4 small container and store in the refrigerator overnight.
Remove a container and microwave for breakfast for 2 minutes and enjoy!

As a child I remember waking up to the smell of oatmeal and cinnamon. It was Grandma in the kitchen making breakfast for me before I went to school. I grew up in NYC and winter months were brutal. I remember her saying, come eat breakfast and get something warm in your tummy before you go out into the cold weather. I was too sleepy to pay attention back then.

I can remember those days and appreciate them so much. The difference now is I don't always have the time to cook oatmeal before I head to work. I had to think of a way to get the nutrition and the fuzzy home feeling it gives me to have some yummy oatmeal. This is it! Prepare your oatmeal ahead of time and enjoy!
