1 cup flour
1 cup cornstarch
1/4 tsp salt
1/4 tsp monosodium glutamate
1 egg, beaten
1 2/3 cup ICE water

Directions:
Add water to the rest of the ingredients and mix well with fingers. Heat vegetable oil in a deep heavy pan. Test oil by dropping a bit of the batter (below); if it rises to the surface immediately, the oil is ready.

Dip fingers in the thin watery batter and sprinkle on the surface of the hot oil. Repeat several times to make a lacy background. Then dip 3 or 4 shrimp in the batter and place carefully on the lacy batter sprinkle more batter on top of shrimp. After 30 seconds or so turn shrimp and cook 30 seconds on the other side. Drain on paper towels and keep warm in a 250º oven while you prepare the rest.

Serve with vegetable dipped in the same batter and quickly fried in the same hot oil.
