1/2 cup butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 egg
1 cup smooth peanut butter
1/2 tsp vanilla
1½ cup all-purpose flour
1/2 tsp salt
1/2 tsp baking soda
1 cup peanuts (or chocolate chips!)

Directions:

1. In bowl, cream butter and granulated and brown sugars until fluffy; beat in egg, peanut butter and vanilla.

2. In a separate bowl, combine flour, salt and baking soda; add peanuts (of chocolate chips). Stir into peanut butter mixture.

3. Roll dough, 1 tbsp at a time, into balls; place 1 inch apart on lightly greased baking sheets and gently flatten with fork.

4. Bake in 375ºF (190ºC) oven for 10 minutes or until light golden brown. Let cool on rack.
