For a 9x12 pan
7 medium soft tortilla shells
1 med size can of refried beans
8-10 oz of medium sharp cheddar cheese
1 lg can of red enchilada sauce (I use mild)
1 lg can of green enchilada sauce
1 roasted chicken from Costco, shredded

Directions:
Directions:
In tortilla shell, spread refried beans, add a large handful of chicken, handful of cheese, 2 tablespoons of one of the enchilada sauces. Roll up and place in pan. Repeat until pan is full. pour the remaining enchilada sauce,

Bake at 350 degrees for 45 minutes.

I put the rest of the ingredients on the side as most people in my life are very picky. I usually do onions, sour cream, avacado or guacamole, olives

These are also delicious with the green enchilada sauce - which Wendy used for Anita's 50th birthday party.
