2 Cups All-Purpose Flour
1 tsp Baking Soda
1/4 tsp Salt
1/2 Cup Butter
3/4 Cup Packed Brown Sugar
2 Large Eggs, beaten
2 1/3 Cups Mashed Overripe Bananas

Directions:
Directions:
1. Preheat oven to 350 degrees.
2. Lightly grease a 9x5 inch loaf pan
3. In a large bowl, combine flour, baking soda and salt.
4. In a separate bowl, cream together butter (softened to room temperature) and brown sugar. Stir in eggs, one at a time, and mashed bananas.
5. Stir banana mixture into flour mixture; stir until just blended
6. Pour mixture into loaf pan.
Bake for 45-50 minutes until a toothpick inserted into center comes out clean.
7. Cool in pan for 10 minutes before removing and turning it out on a wire rack to finish cooling.

This recipe is fantastic! Because not all ovens are the same, start checking with a toothpick at 40 minutes and in 5 minute intervals until fully baked.
