3 large eggs
1/2 c whole milk
1/8 tsp grated nutmeg
1 tsp sea salt
1/2 tsp black pepper
3 c bread crumbs (seasoned)
1/2 c Parmigiano Reggiano cheese
8 thin slices of veal scaloppini
2 tbsp olive oil
8 thin slices of Proscuitto
8 thin slices of fontina cheese

In small bowl, beat together eggs, milk, nutmeg & half the salt & pepper.
In another bowl, mix together bread crumbs, cheese and remaining salt & pepper.
Pound the veal with a mallet between plastic wrap. Dip each cutlet first in the egg mixture, then dip in bread crumb mixture. Repeat with all cutlets. Refrigerate until ready to cook. Preheat oven to 350ºF. heat the oil in frying pan, add a couple of cutlets at a time, cook until golden brown on both sides. Drain on paper towels. Place cutlets on sheet pan, top each with a slice of prosciutto and cheese. Bake in oven for 10-15 min, or until cheese is melted. ENJOY
