1 box red velvet cake mix
2 eggs
1/2 c. vegetable oil

1 can Cream Cheese frosting

Preheat oven to 375

Mix together the cake mix, eggs and oil in a large bowl. Roll the dough into balls the size of a walnut. Place 2 in. apart on ungreased baking sheets.
Bake in preheated oven until the tops start to crack, about 8 min. Cool in the pans for 10 min. before removing to cool completely on a wire rack.
Spread a generous amount of frosting on the bottom of a cookie, sandwich it with another cookie, pressing firmly so that the frosting comes all the way to the edge.
Repeat with the remaining cookies.
