1/2 cube of butter
1 large 30-ounce bag of hash browns
8-ounce grated cheddar cheese
8-ounce grated monterey jack cheese
3/4 pounds diced ham, bacon or sausage
5 eggs (you can add more to make it thicker)
1 cup milk

Directions:
Directions:
Melt 1/2 cube butter in a 9x13 pan. Add 1 large bag hash browns frozen. Bake at 425 for 20 minutes, breaking up hashbrowns occasionally. This will give a slight crunch to the texture but is not a necessary step. While hashbrowns are cooking, brown sausage if using and drain. When hashbrowns have completed cooking, layer your meat of choice, followed by a mix of 8 oz. grated cheddar cheese, 8 oz. grated Monterey jack cheese (or you can use the 16 oz. bag of mixed Mexican). Finally, mix 5 eggs and 1 cup of milk, then pour all over the hashbrowns, meat, and cheese. DO NOT MIX! Bake 375 for 40 minutes-loosely covered.

***This recipe can easily be doubled, tripled, and quadrupled for family and other gatherings.
