1 lb. hamburger
1 T grated onion
1/3 C chopped celery
1-1/2 C cooked rice
Salt and pepper
Tomato Sauce (1 C- or less) For those of us who can't do Toms - Use Beef broth or some cooked acorn squash
6 green peppers

Directions:
Directions:
Brown meat. Add grated onion and chopped celery, and cook for 5 minutes.
Add cooked rice, and moisten with tomato sauce (or broth)

Wash peppers; cut large ones in half length wise; If smaller ones, remove a slice from stem end. Remove seeds and cut away seeds. (In Mom's own writing)
Place in Boiling water and boil 5-8 minutes, Drain.

Stuff with mixture of hamburger, onion, chopped celery, rice and salt and pepper,
to taste. And Place in shallow dish containing small amount of water.
Pour Tomato sauce (most of the 1 cup) -OR vegetable or beef broth-
Over the stuffed peppers.
Bake in a moderate oven 375º for 25-30 minutes

This is an old recipe in the very back of the her Betty Crocker 1944 cookbook,
handwritten.
I added an alternative to tomato sauce as 2 of her 3 children cannot eat the
