olive oil
2 small rainbow trout, cleaned & butterflied (1lb)
1 lemon sliced
4 fresh parsley or dill sprigs
salt & pepper

Directions:
Directions:
Heat oven to 400º. Cut two sheets of heavy duty al foil that are larger than your fish
Place trout, skin side down on each piece of foil. Lightly oil both sides & season both sides inside & out with salt & pepper
Place 2 sprigs & 2 lemon slices down the middle of each fish
Fold up foil be grabbing the edges and crimping together to make a packet

Place packets on baking sheet & bake 10-15 min. Checking for donees, flesh should pull apart easily with a fork. I just baked for 20 min.

Carefully open packets & slide fish onto the plate & pour juices over it. Serve with more fresh herbs & lemon slices.
