4 - 6 pieces of cod
5 cloves garlic, minced
1/4 cup parsley, fresh, chopped
Optional: Grape tomatoes, halved and sliced green onions

LEMON JUICE MIXTURE:
5 tablespoons lemon juice, fresh
5 tablespoons olive oil
2 tablespoons butter, melted

COATING:
1/3 cup flour
1 teaspoon coriander
3/4 teaspoon paprika
3/4 teaspoon cumin
3/4 teaspoon salt
1/2 teaspoon pepper

Directions:
Directions:
Turn oven to 400 degrees. Heat 2 tablespoons olive oil in skillet. Dip fish in lemon juice mixture. Dip in flour/spice mixture. Sear in skillet. May add grape tomatoes and green onion, if desired. Add garlic to remaining lemon juice mixture and drizzle over seared fish. Bake in heated oven about 10 minutes, until it flakes. Remove from oven and add fresh, chopped parsley.
