1 lb. medium fresh mushrooms
vegetable oil
¼ c. chopped onion
½ tsp. garlic
1 lb. ground pork
¾ c. dry bread crumbs
¼ c. water chestnuts
4 tsp. soy sauce
2 tsp. ginger
¼ tsp. salt
1 egg beaten

Preheat oven to 350º. Rinse and pat dry and remove stems of mushrooms. Finely chop stems- set aside. Heat 2 tbsp. oil. Add onion and garlic. Sauté until tender. Add pork, bread crumbs, water chestnuts, soy sauce, ginger, salt, and chopped mushroom stems. Sauté until brown. Remove from heat. Stir in egg and spoon into mushrooms. Bake until hot - almost 10 minutes. Garnish with parsley.
