Green Chile Sauce. Enchiladas.

1 12 ounce can evaporated milk 1 1/2 pounds ground beef
8 ounces Velveeta Cheese, cubed 10 (6-7 inch) flour tortillas
3 Tablespoons all- purpose flour 1 Tablespoon vegetable oil
1/4 cup (1/2 stick) butter 1 onion, chopped
1 (4 ounce) jar green chiles 8 ounces Cheddar cheese, shredded
1 (2 ounce) jar pimento

Directions:
Directions:
To prepare the sauce, combine the evaporated milk, Velveeta cheese, flour, butter, green chiles and pimento in a saucepan. Cook over low heat until the cheese is melted, stirring frequently.

To prepare the enchiladas, brown the beef in a skillet, stirring until crumbly; drain. Brown the tortillas lightly one at a time in the oil in a skillet, turning once. Fill each tortilla with ground beef, onion and cheese and roll up to enclose the filling. Place in a 9 x 13 baking dish. Pour the sauce over the top. Bake at 325 degrees for 20 minutes.
