In a large Stock Pot, brown ground beef with all seasonings and some water (just enough to have the seasoning mix with ground beef). Once meat is browned, add all other ingredients. Bring to a boil and then simmer for 2 hours. If needed add 1 Ė 2 cups of chicken stock to reach desired consistency.

1 large onion, chopped
2 (28oz) cans diced tomatoes
2 (15.25oz) cans black beans, drained
2 (15.25oz) cans yellow corn, drained)
1 (30oz) jar diced nopales, drained (cactus) (Walmart consistently caries this if you canít find it)
1 (8oz) can tomato paste
3 tablespoons chili powder
2 tablespoons white sugar
1 Chipotle pepper, chopped (and / or can use the peppers and onions that the jarred cactus is pickled in)
2 teaspoons of garlic powder
1 teaspoon ground cumin
1 teaspoon salt
1 teaspoon ground black pepper
