1 T olive oil or canola oil
1 (2½ to 3 lb) first cut brisket of beef
2 large onions, diced
2 large carrots, diced
2 garlic cloves
3 T tomato paste
½ c dry red wine
½ c vegetable, poultry or beef stock
2 bay leaves
2 T vinegar
1 T brown sugar
2 T ketchup

Directions:
Directions:
Use a Dutch oven or roasting pan with heavy bottom; heat the oil until almost smoking. Add the brisket and cook, turning, until browned on both sides. Add onions, carrots, and garlic and saute until golden brown. Add wine, stock, bay leaves, vinegar, sugar, and ketchup. Cover and simmer for 1½ to 2 hours until tender. Season with salt and pepper as desired.
