Ingredients: 15 oz ricotta cheese strained* 8 oz mascarpone cheese ⅔ c powdered sugar plus more for dusting if desired ½ c heavy cream ½ c mini semi sweet chocolate chips (chopped pistachios would be good too)

Directions:Blend together the ricotta and mascarpone cheeses while pressing mixture along bottom of bowl to smooth the texture
Fold in the powdered sugar
In a separate bowl, whip heavy cream until stuff peaks
Place half the whipped cream mixture to the ricotta mixture and fold until combined then add remaining whipped cream and continue to fold. Fold in chocolate chips saving a few to garnish on top
Serve with graham crackers, strawberries, cannoli chips or fried tortilla chips dusted lightly with cinnamon |

Notes: * To strain the ricotta, simply spoon the ricotta over several layers of paper towels, wrap, and squeeze the excess moisture. You want to remove enough that the liquid so the ricotta holds it's shape.
