½ cup all purpose flour
½ cup milk
2 tbsp butter

1. Heat oven 425ºF.

2. In medium bowl, beat eggs slightly. Add flour and milk to eggs, beating with rotary beater (mixer) until combined.

3. Melt 1 tablespoon butter in each of two 9-inch glass pie plates in oven; spread to cover bottom. Pour batter into prepared pie plates.

Bake at 425F for 10-15 minutes or until golden brown. Pancakes will form a well in the center and edges will puff up.

Top with sliced fresh fruit (strawberries, bananas, blueberries, raspberries, oranges, peaches, etc), or syrup (even chocolate chips). Serve immediately before they deflate!


For 4 servings, double the ingredients and use four 9-inch glass pie plates.
