24 large mushrooms ( I usually get portabelos at the 99 cent store)
1 lb mild Itallian Sausage, bulk or remove from casings
1 med onion diced fine
4 oz freshly grated parmesan cheese (divided--reserve a few TBSP for topping)
1 tsp minced garlic (I just use the jarred stuff)
1/2 tsp dried parsley
1/4 Cup Italian breadcrumbs

Preheat oven o 350 degrees
Wash mushrooms quickly and hollow out stems. reserving any mushroom bits you can use later. Throw those chopped bits in the mix.

Saute the sausage and onion. Drain off excess fat. Stir in cheese, bread crumbs, garlic, mushroom bits and parsley. Cook 3-5 minutes.

Stuff mushroom caps.

Bake 12 minutes. Sprinkle on remaining parmesan cheese and bake three minutes more to melt the cheese.

Serve hot. Yum. This can be halved easiy depending on the size of your dinner party or the amount of ingredients you have.

This recipe has been around for years. We had a dear friend "Margaret" that used to bring them to dinner parties.
