1-lb. thick sliced bacon, diced and cooked
1-32oz. pkg. cubed O’Brien hash browns, thawed
8 oz. cheddar cheese, shredded, divided
1 dozen eggs
2 cups milk
⅛ tsp. Paprika

Directions:
Directions:
Spray a 13x9x2 inch baking dish, with non-stick spray. In a large bowl combine, potatoes, bacon and 1 cup cheese, mix well. Spread into bottom of baking dish. In a medium bowl, beat eggs and milk until smooth. Pour over potato mixture. Sprinkle top with paprika. Bake uncovered, at 350° for 45 to 60 minutes or until top is golden. Top with remaining cheese. Bake 5 minutes more. Cut into squares and serve. May be prepared the night before. Makes 12 to 16 servings.
