Zucchini Pattie Recipe

Ingredients:  
3 c grated zucchini
t salt
3 T grated onion
t pepper
1 c soft bread crumbs
2 T minced parsley
⅓ c freshly grated Parmesan Cheese
2 eggs, well beated
Melted margarine to brush on top
Fine bread crumbs to coat patties

Directions:
Directions:
Mix zucchini, onion, parsley, Parmesan cheese, soft bread crumbs, salt, pepper and eggs. Mix thoroughly. Make into patties. Place on a well greased cookie sheet. Sprinkle on fine breadcrumbs. Brush tops with melted margarine. Bake 350
35 to 40 minutes
Or you can fry patties in skillet with margarine.
