4 egg yolks (or 2 whole eggs)
1 C sugar
2 Tbsp soft shortening
3/4 C milk
3 1/2 C sifted flour
4 tsp baking powder
1/2 tsp salt
1/4 tsp nutmeg
1/4 tsp cinnamon

Directions:
Directions:
Beat eggs thoroughly. Then beat in sugar and soft shortening. Stir in milk. Sift remaining ingredients together and then slowly stir into the liquid ingredients and mix till well combined. Turn onto generously floured board; knead 5-6 times. Roll out 1/3 inch thick. Let rest 20 minutes. Heat fryer to 390º F, but temp can be 370-380º while frying. Cut with doughnut cutter. Fry in hot fat until brown. Drain on absorbent paper. Serve plan, sugared or glazed. FOR SUGARED DOUGHNUTS: shake one doughnut in a paper bag with a little granulated or confectioner's sugar. FOR GLAZED DOUGHNUTS: Add 1/3 C boiling water gradually to 1 C confectioner's sugar. Mix well. Dip warm doughnuts into the warm glaze.
