3/4 cup shredded cheese, divided (can be multiple kinds)
2 slices Sourdough bread
2 T butter, melted
1 T Dijon mustard

Directions:
Directions:
1. Spread Dijon mustard across one slice of bread.
2. Make sandwich using 1/2 cup of the shredded cheese.
3. Brush 1/2 of the melted butter evenly across the top of the sandwich.
4. Place sandwich butter-side down in frying pan and cook until desired doneness.
5. While the sandwich is cooking, brush the top of the sandwich with the rest of the melted butter.
6. Flip sandwich to fresh side and cook and until desired doneness.
7. Sprinkle 1/2 of the remaining shredded cheese in the pan and immediately top with the sandwich. Leave for 30-45 seconds until the cheese melts into the sandwich and lightly browns.
8. Sprinkle the rest of the shredded cheese and flip the sandwich onto the freshly sprinkled cheese. Leave for another 30-45 seconds.
9. Cut in half and enjoy!

I ALWAYS ALWAYS ALWAYS serve grilled cheese on a paper plate so it doesn't get soggy. And then I usually dip each bite into a little ketchup. Don't knock it til you try it!!
