Pizza Sauce : 1 - 28 oz. can tomatoes, 1 - 5 1/2 can tomato paste, 1 tsp. seasoned pepper, 1/2 tsp. crushed chilies, 1 1/2 tsp. oregano, 1 tsp. basil, 1/4 tsp. cayenne,
1 tsp. Italian seasoning, 1 tsp. celery salt, 1 1/2 tsp. aniseed (very important) 1 tsp. garlic salt, 1 tsp. pizza blend (if you can find it). Put all ingredients in a blender and purée. Divide into 10 small containers of about 1/4 c. each. Use 1 container for one pizza. Spread thinly. Freeze extra containers for future pizzas. Best sauce ever!

Pizza Dough: 1 - 5 lb. of flour, 4 tsp. salt, 4 Tbsp. Oil, 2 c. milk, 5 tsp. Fleischmann’s
yeast, 6 c. water.
Mix flour & salt. Make a well in middle and add liquid. Mix. Knead as for bread. (8-10 minutes). Once it is smooth, put dough in approx. 1-lb. balls. Roll dough into balls and then in flour. Wrap each dough in Saran Wrap. You can freeze dough balls and remove from freezer as needed. Thaw in fridge for the day and remove 30 minutes before using. Awesome dough!

Roll dough out on dull side of heavy duty aluminum foil. Use flour (or sprinkle it on dough) so that it doesn’t stick. Roll out with rolling pin. Once the dough is rolled out, place sauce on it, then add cheese, sprinkled all over to cover sauce; then add selected items.

Cook in 500º oven (preheated) for 12 to 15 minutes or until the crust is golden brown.

Paulette's pizza was like a people magnet. Pizza night at Paulette's house was a regular event, often including family and friends from near and far. All were welcome. Pizza making has become a family tradition with some of us making it a Friday night special!
