Creamy Chicken Noodle Soup Recipe

2 cups white or yellow onions (chopped into bite-size pieces)
2 cups Carrots (chopped into bite-size pieces)
2 cups Celery (chopped into bite-size pieces)
* Time-saving note. Often grocery stores carry Onion, Carrots, and Celery pre-chopped in their produce area. It's called "Mirepoix". I like buying it from Trader Joe's.
Chicken Bouillon (I use Better Than Chicken)
2 cans Cream of Chicken Soup (10.5 oz each)
1 cup Sour Cream
1 large package Egg Noodles (about 12 oz)
2 Tbsp Butter or Olive Oil

2-3 lbs Chicken
* Time-Saving Tip - Buy a Rotisserie Chicken from Costco or next time you cook chicken breasts, double your recipe. I usually shred chicken and freeze 2-3 cups of it to use for this soup.

Salt, pepper, and whatever seasonings you like typically. I like using Garlic Powder, and Italian Herbs.

Place Onions, Celery, and Carrots in a large pot. For extra flavor, you can saute in butter or olive oil in the bottom of the pot for 2-3 minutes.

Add water and bring to a boil. I typically fill my pot with about 10-12 cups of water. You can do more or less. This recipe is forgiving that way.

Then add your Better Than Bouillion. (Usually 1 tsp per cup of water), salt and pepper and seasonings to taste. Bring to a rapid boil.

Add raw chicken breasts and Egg Noodles. And cook for about 10-15 minutes until chicken is cooked through and noodles are done.

Remove chicken breast and allow to sit for 3 minutes. Then shred chicken and return to the pot.
***You can also buy or use precook chicken and shred it and add to the soup. at this time. Rotisserie chicken from Costco or the grocery store is fun to add to this recipe.

Turn heat to low and add Cream of Chicken soup and Sour cream.
Allow pot to simmer and mix flavors together for about 5 minutes.

Serve with Dinner rolls and salad.

This soup was brought to me by Carrie Farr after I had Andrew. It's quickly become a family favorite and we eat it often. I often brought this soup to Grandpa Dahl when he wasn't feeling well and he loved it.
