Directions:
Pat pork dry with paper towels and season all over with brown sugar bourbon seasoning. Heat a drizzle of oil in a skillet over medium-high heat. Add pork and cook until browned and cooked through. Turn off heat; transfer pork to a plate and wipe out pan.

Halve, core and dice apples into 1/4 inch pieces, leaving skin on. Trim and thinly slice scallions.

Heat 2 TBSP butter and a drizzle of oil in pan used for pork over medium-high heat. Add apple and scallion whites, season with salt and pepper. Cook, stirring occasionally until golden, 4--6 minutes.

Stir in stock concentrate, 3/4 cup water and 1 tsp sugar. Cook until sauce is thickened and apple is tender, 5--7 minutes.

Personal Notes:
This is a Hello Fresh food delivery recipe. Chicken Stock concentrate can be found at Kroger or Trader Joe's. You could most likely use chicken broth and omit the water.

This dish pairs well with mashed potatoes. Hello Fresh uses Yukon gold unpeeled and diced, smashed and then put a couple TBSP sour cream and butter in with them, and top with the green scallion tops, chopped.
