1/2 pt Cream
1/2 C Sugar
1/4 lb Butter
1/2 C Nuts
1 Egg Yolk
1 C Drained and Mashed Pineapple
1 Egg White, Stiffly Beaten
Vanilla Wafers
Shredded Coconut

Directions:
Directions:
Cream together sugar and butter. Add egg yolk, pineapple, and nuts. Fold into egg whites. Make sandwiches with the vanilla wafers by putting some of the batter between two cookies. Put in fridge for several hours.
Whip cream until stiff and sweeten to taste.
Cover cookies in whipped cream and dip in coconut. Place in fridge to chill.
