6 eggs (RT) yolks and whites separated
1tsp Cream of Tartar
1 cup granulated sugar
1/2 cup oil
1 tsp vanilla
1 cup cake flour
1 tsp baking powder
1/2 tsp salt

Directions:
Directions:
Sift flour and baking powder, set aside
In another bowl, beat egg whites and cream of tartar till meringue like but not stiff
Gradually add sugar while beating, add vanilla and add oil very slowly
Add yolks one at a time beating well after each addition
Add the mixture of sifted flour and baking powder in several additions, mixing well
Pour into muffin pans lined with paper liners , 3/4 full
Bake in a preheated oven 350 degrees for 12 - 15 minutes .
Ready when a wooden toothpick inserted into cake comes out clean.
