1 Tbsp. olive oil
3 clove garlic, minced
1 onion, chopped
2 c. long-grain white rice
1 tsp. kosher salt
4 c. chicken broth
3 limes, juiced and zested
1/4 c. cilantro, chopped

Directions:
Directions:
In a large saucepan, heat oil on medium. Add garlic and onion. Cook 3-4 minutes. Reduce heat to low. Add rice, salt, and 2 c. broth. Bring to a boil. Add remaining broth, lime juice, lime zest, and cilantro. Bring back to a boil on low and simmer 10-15 minutes or until rice is tender and liquid is absorbed.
