1 1/4 Cup All Purpose Flour
1 1/4 Cup Cornstarch
2 T. + 1/2 Tsp Baking Powder
1/2 Tsp Salt
1/4 Tsp Cajun Seasoning
1 1/2 Cup Cold Water
1/2 Tsp Vegetable Oil
2 1/2 Cup Coconut
Oil for frying

Directions:
Directions:
Heat oil until reaches 325 degrees. In a large bowl, combine dry ingredients. Stir in water. It is pretty thick. Add extra water if needed. Place coconut in different bowl. Dip dry shrimp in batter then in coconut. Fry until golden brown.
