6 ounces Pisco
3 ounce simple syrup
3 limes -> 2 1/4 ounces lime juice (don’t let lime juice run over skin)
3 egg whites

Directions:
Directions:
Mix all ingredients in a shaker with ice (or in a blender and then pour over ice).

Simple syrup: to make ½ cup (4 oz), put 1 cup water and 1 cup sugar in saucepan over medium heat until sugar dissolves; increase heat slightly , then simmer 5 min, stirring occasionally. Refrigerate until cold (3 hours). Cover and keep refrigerated (lasts 1 week).
