1⅓ C flour
⅔ C sugar
2 Tsp baking powder
⅔ C milk
¼ C butter, softened
1 egg
1 Tsp vanilla
3 C assorted fresh berries

Whip Cream:
2 C heavy cream
¼ C powdered sugar
1 Tsp vanilla
dash salt

Directions:

Pre-heat oven to 350º

Grease and lightly flour an 8" square or round cake pan.

In a medium bowl combine flour, sugar and baking powder. Add milk, butter, egg and vanilla. Beat on low until combined. Beat on med for 1 minute. Spread batter in prepared pan.

Bake about 30 minutes or until toothpick comes out clean.

Cool cake in pan on rack 10 minutes. Loosen sides of cake, invert onto plate.

Cool 30 minutes more.

Cut into squares or wedges; split pieces in half crosswise. Serve with berries and whipped cream.

Whipped Cream:
Beat ingredients in a chilled mixing bowl on medium until soft peaks form.

Serve as desired.


Note: sprinkle a little sugar over the berries and let stand at room temp for a bit so they release some juice.
