Serves 4 hungry appetites

1 LB ground beef 70/30 or 80/20
1 medium onion diced
3 cloves garlic finely chopped or 1 tbsp. minced garlic
1 tsp parley *
1 tsp basil *
1 tsp oregano *
*dry or freshly chopped ( remove leaves, stems can be saved for soup )
1 cup parmesan cheese - optional

Make the panade:
6 slices of bread with crusts removed. Cut or tear into 1 in sized pieces
1/2 cup milk / cream
1 tsp salt
1 tsp pepper
1 tsp

olive oil - about 3 tablespoons for browning

Sautee the onions and garlic in 1 tbs olive oil until the onions are softened, then remove them to a large mixing bowl and set aside to cool

Put the bread in a separate mixing bowl, and pour in the milk. Let stand about 10 minutes while the onions and garlic cools. Drain the extra milk and use a fork to press out most of the milk.
Put the ground beef in the large mixing bowl with the onions and garlic, add the bread ( panade ) Add in the spices, onions, salt and pepper, and baking soda and parmesan

Mix well and refrigerate for at least half an hour
Form the meatballs and brown in the remaining 2 tbsp olive oil
Finish by either baking in the over at 325 for half an hour or add to a saucepan of sauce and slow simmer for at least an hour
