½ Cup freshly squeezed lime juice
¼ Cup olive oil
2 Tablespoon honey
¼ teaspoon cayenne pepper
4 (4oz) boneless, skinless chicken breasts
1 ripe avocado, pitted peeled and sliced
1 Cup grape tomatoes or quarter cherry tomatoes
½ Cup peeled, seeded and chopped cucumber
¼ Cup Fresh Basil, chopped

1. In a small bowl, whisk together lime juice, olive oil, honey salt to taste and cayenne pepper. Pour half mixture over chicken in resealable plastic bag, saving the remaining mixture for later use. Seal bag with chicken; place in refrigerator for at least 1 hour.

2. Spray cold grill rack with nonstick cooking spray. Preheat grill to medium heat. Remove chicken from bag, discarding marinade and bag. Place chicken pieces on grill, cover with grill lid, and cook for 8-10 minutes on each side or until tender and no longer pink. (170º F). Chop into pieces.

3. Combine chicken pieces, avocado, tomatoes, cucumber and basil in large salad bowl. Toss gently with remaining lime mixture and serve immediately.
