3 large eggs
2 C sugar
1 C oil
1 Tsp vanilla
2 C flour
2 Tsp cinnamon
1 Tsp baking soda
½ Tsp salt
4 C chopped peeled tart apples
¾ C chopped pecans

Frosting:
1 8oz. pkg. cream cheese, softened
2 Tsp butter, softened
2 C powdered sugar

Directions:
Directions:
In a large bowl, beat eggs, sugar, oil and vanilla.

Combine the flour, cinnamon, soda and salt, add to egg mix and mix well.

Fold in apples and nuts.

Pour into greased 13 x 9" baking dish.

Bake at 350º for 55-60 minutes or until toothpick comes out clean.

Cool on rack.

In a small bowl, beat cream cheese and butter. Add powdered sugar, beating until smooth.

Spread over cooled cake.

Refrigerate leftovers.
