Sautéed Squash Recipe

3 yellow squash
1 medium onion, chopped
1 tbsp. salt
1-1 ½ tbsp. sweet paprika
½ stick butter
Sour cream
Water

Peel squash, cut in half, remove seeds and shred it. Place shredded squash in a bowl and salt it, about 1 tbsp. and let sit for 10 min.

Then, squeeze liquid out of the squash.

Sautee onions in butter in a medium sauce pan. Add the squash with a little water so it doesn't stick to the bottom and dry out. Sautee on low heat till squash cooks down, about 15 min. As it's cooking, add paprika - enough to color it a light orange.

When cooked down, squash will be somewhat soupy. You can stir in a couple tablespoons of sour cream before serving, or serve as-is. Good either way.
