4-6 pork chops

Flour
2 tbsp. olive oil
½ onion, sliced
½ green bell pepper, coarsely chopped
Sliced mushrooms (optional)

Sauce:
10 oz. can Cream of Mushroom soup
¾ cup water

OR

10 oz. can Golden Mushroom soup
10 oz. can Cream of Celery soup
⅓ cup water

Mashed potatoes or cooked egg noodles

Rinse pork chops, shake off any extra water, then season on one side with garlic salt and pepper. Heat olive oil in a large skillet. Dip pork chops in flour and brown on both sides.

Once browned, place the pork chops in a 9x13 baking dish and cover with onions, green pepper and mushrooms. Combine soup and water (or the two alternate soups) in a small sauce pan over low heat, then pour over the pork chops.

Cover with aluminum foil and bake at 325º for 1¼ hours. Uncover and bake 10 min. longer.

Serve with mashed potatoes or cooked egg noodles.
 

Mashed Potatoes

4-6 Idaho or Red potatoes
4-5 tbs. butter, softened
1 tbsp. sour cream
Milk
Garlic salt

About 45 min., before pork chops are done, peel, rinse and cube potatoes and boil for 25 min., until soft.

Drain water and put potatoes into mixing bowl with a splash of milk, butter, cut into slices, sour cream and garlic salt to taste. Use a hand masher or a mixer and mash until smooth, adding milk to get the consistency you want.

If it wasn't a holiday, this was one of the meals that Grandma frequently made for family gatherings. There's two ways to make the sauce: 1) with Cream of Mushroom soup OR 2) with Golden Mushroom and Cream of Celery soups. Both taste great! Try it both ways to see which you like best!
