Sheila’s Christmas Cake Recipe

2 cups Muscat raisins
2 lbs currants
1 lbs mixed cherries
1 lrg bottle maraschino cherries
1 lb glazed pineapple
˝ lb sultan or ˝ mixed fruit
˝ lb almonds

Add 2 cups of brown sugar
6 oz of sherry, port, or rum
2 oz vanilla
2 oz almond extract
2 oz maraschino cherry juice
Stir everyday for 8 days

1 lbs of butter
12 large eggs
4 ˝ cup flour
1 tsp baking powder
1 tsp baking soda (dissolved in 1 tsp of water)

Mix cake ingredients together and add fruit mixture. pour into pan (greased and dusted with flour, or lined with parchment paper)

Bake at 275-300 degree’s for approximately 2.5 hours (check regularly)
