1 loaf Italian bread
5 cups celery, sliced thin
2 medium onions, chopped
½ lb. ground pork
½ lb. ground beef
1-2 eggs
1 ½ butter, softened and cut into ½ inch slices

Need to prepare this the day before Thanksgiving:

Cut up the bread into cubes, place on a cookie sheet and toast in the oven at 325º until bread is dry, like croutons. You'll need to mix the bread periodically to get moist pieces to the top as it's toasting. Once done, cool and you can return the bread to the original bread bag and store on the counter.

To prepare the stuffing (do this the night before):

Combine all ingredients in a large soup pot. Use 2 eggs or a few extra tablespoons of butter if you think the it needs more moisture. Get your hands in there and really mix it up, mushing the butter so it spreads throughout and ingredients are well mixed. Season with pepper - probably about ½ - 1 tsp. pepper.

Cover with plastic wrap and pot lid and store in refrigerator till it's time to bake (overnight, if you're cooking the turkey in the morning).

If you are stuffing the turkey, this recipe will stuff 2 turkeys, with some stuffing possibly left over to bake in a separate baking dish.

If you're not stuffing into the turkey, or you have leftover stuffing to bake, bake at 350º in a casserole dish for 1 hour.

Since we usually serve Thanksgiving dinner at lunch time, I mix the stuffing the evening before and store in the fridge till the next morning, then bake what doesn't go into the turkey for an hour right before dinner.
