2 tbsp olive oil
1 yellow onion
1 clove garlic, minced
½ tsp ground cumin
¼ tsp salt, ¼ tsp pepper
½ lb tomatoes
4 large eggs
Spinach (optional)

Directions:
Directions:
Heat oven to 400º.

Heat oil in large skilled on medium. Add onion and sauté until golden brown and tender, 8 min.

Stir in garlic, cumin, salt, and pepper. Stir in tomatoes, transfer to oven and roast 10 min.

Stir, then make 4 small wells in veggie mixture and carefully crack 1 egg into each well.

Bake eggs to desired doneness, 7 min (or less for runny yolks). Sprinkle with spinach if desired.
