1½ c. buttermilk waffle & pancake mix
1 egg, beaten
2 tbsp. vegetable oil
1 c. water (more or less for desired consistency)

In a medium bowl combine egg, oil and water. With a wire whisk stir in pancake mix until well blended. Let stand 5 minutes. Lightly oil griddle (or skillet) Pour about ⅓ c. batter onto hot griddle to make one pancake. Cook until edges are dry and bubbles cover the top. Turn pancake over. Cook 35-45 seconds longer until browned on both sides. Makes about 10 small pancakes.
