1 medium onion, chopped
1 green, red or yellow bell pepper OR 2 yellow semi-hot peppers, chopped
28 oz. can seasoned Dei Fratelli tomatoes, chopped, OR stewed or diced tomatoes
⅔ cup instant brown rice
2 tbsp. olive oil
1/2 tsp. salt

Directions:

Sautee onion and green pepper in olive oil in medium sauce pan for about 5 min.

If you have a chopper or blender, chop the tomatoes finely. If not, you can put them in as is. Add tomatoes. Cover and cook on low for 10 min.

Add brown rice and salt.

Cook on low another 15 min.

How many times have you walked into Grandma's house and she asked if you wanted to stay for dinner? This is one of Madison's favorites and the men in the family like it too! Satarash was probably on the stove many of those times. This is such an easy side dish and great with so many things, like ham, Hungarian sausage, fried chicken, ribs or pork!
