8 oz. cream cheese, room temperature
3 sticks butter, room temperature
3 c. flour
3 eggs
3 Tbsp. butter
3 tsp. vanilla
2 1/4 c. brown sugar
1 1/2 c. finely chopped pecans

Directions:
Directions:
Add flour to a large bowl. Cut in cream cheese and 3 sticks butter until a dough is formed. Form dough into 1" balls. Press balls into and up the sides of the mini-muffin pan.

In a medium bowl, stir together eggs, 3 Tbsp. butter, vanilla, brown sugar, and pecans. Fill each pastry cup 2/3 of the way full with filling.

Bake 30-45 minutes at 350º.

My Mama made these in large bulk and always kept some in the deep freezer out in the washroom for holidays and family gatherings. I liked to sneak into the freezer and slip them out of the container and eat them frozen. I wonder if she ever knew?
