CRUST:
1 sleeve saltine crackers
3 Tbsp sugar
stick butter, cut into cubes

PIE FILLING:
4 egg yolks
1 14oz can sweetened condensed milk
cup lemon or lime juice
Pinch of kosher salt

Place saltines in food processor with sugar and butter until it forms a ball.
Press into pie shell. Freeze for 15 minutes. Bake crust 350 for 12-15 minutes or until golden.

PIE FILLING:
Whisk yolks, milk, lemon juice and salt. Combine well. Pour into pre-baked pie shell and continue to bake another 14-16 minutes.

Refrigerate overnight. Top with whipped cream.
